10-23-13 fish fry-perch study

MILWAUKEE (AP) — Wisconsin fish fry lovers take heart: There's a new research project aimed at boosting production of yellow perch. Yellow, or lake, perch were long a staple of the fish fries offered on Friday nights at restaurants, supper clubs and taverns throughout Wisconsin. But perch have been replaced with cod and other species as their population waned. UW-Milwaukee fisheries biologist Fred Binkowski says the new research is aimed at ensuring there's plenty of yellow perch for fish fries.
